SWEET AND SPICY SUSHI BOWL

Sushi bowls are so easy to make and taste delicious! Throw in all your favorite sushi ingredients into a bowl, drizzle over a spicy Sriracha sauce and you have a meal that everyone will love. I love mango and sweet potato, they're two of my favorite foods! I thought I would incorporate them into this sushi bowl recipe and it was a success. This bowl is a perfect balance of healthy fats, protein and carbohydrates. 

SWEET AND SPICY SUSHI BOWL

Ingredients:
SUSHI BOWL
Organic short grain brown rice
1-2 mango
2 cups organic baby spinach
1 avocado
3-4 organic carrots
1-2 organic sweet potatoes
3 organic cucumbers
Dried seaweed or soy paper
2 Tbsp sesame seeds
SIRACHA TAHINI SAUCE
1 Tbsp Tamari
1 Tbsp Siracha
1 Tbsp Tahini
Juice of 1 lime
 Instructions: 
SUSHI BOWL
Start by cooking your brown rice or rice of choice by following the instructions on your rice package. While your rice is cooking, slice your avocado and chop carrot, cucumber, sweet potato, and mango all in the same shape that you prefer, I chose to cut them into strips. the sweet potato can be steamed, baked or grilled. I grilled the sweet potato until they turned soft and added water throughout the cooking process to help speed up the process. 
SRIRACHA TAHINI SAUCE
Combine sriracha, tahini, lime juice, and tamari in a small bowl and whisk until well combined and desired consistency.
ASSEMBLE SWEET AND SPICY SUSHI BOWL
Start by putting your brown rice on the bottom of your bowl, place your sushi bowl ingredients around the brown rice with your choice of seaweed or soy paper, sprinkle over sesame seeds and drizzle over the sriracha tahini sauce. Enjoy for dinner, take it to-go to school or work and ENJOY a healthy, nutrient dense meal!

HOMEMADE CHEESY BASIL VEGAN PIZZA

Everyone loves a good pizza. I created a vegan, oil free, low fat, supper tasty pizza recipe. You can eat as many slices as your heart desires without the guilt! This pizza is packed with plant-based ingredients that will nourish your body. What pizza nourishes your body? THIS ONE!


Homemade cheesy basil vegan pizza

*Dough makes two pizzas each 8 Slices

Ingredients:
CRUST
3 ¾ cup organic unbleached All-purpose flour
1 ¾ cup lukewarm water
½ tbsp yeast
½ tbsp salt
TOPPINGS
1/2 cup of organic corn
½ cup sliced organic mini heirloom tomatoes
½ cup button mushrooms
½ chopped bell pepper
1 cup organic kale
¼ cup Trader Joes organic mushroom non-fat marinara sauce
¼ cup or hand full fresh organic basil (after pizza is baked)
VEGAN BASIL CHEESE SAUCE
*Makes extra, but trust me, you will want extra* 
1 ½ cup raw cashews (soaked for 30=50 minutes)
¼ cup nutritional yeast
½ tsp salt (optional)
½ cup almond milk or more until reached creamy consistency
1 garlic clove
1 handful fresh organic basil
                         WHAT IS NUTRITIONAL YEAST?
Nutritional yeast has a strong flavor that is described as nutty, cheesy, or creamy, which makes it popular as an ingredient in cheese substitutes.  

Instructions:
THE DOUGH
Mix the yeast and water and let sit for about five minutes. Then add flour and salt. Mix until dough comes together with hands or use a mixer. If its too sticky, add more flour. When it comes together set it in a bowl cover with plastic wrap and set aside to rise for one hour so it can rise and essential double in volume.

THE CHEESE SAUCE
While your dough is rising, combine soaked raw cashews, nutritional yeast, almond milk, salt (optional), garlic and basil in a food processor or blender. Blend until a creamy.
THE PIZZA MAKING
Once your dough has sit for an hour create a clean surface area, dust flour on your working area and begin to flatten out your dough or you can roll it out with a pizza roller. Add as much of extra flour to your dough as you need as it can be sticky. Spread your sauce on your pizza and top with corn, mushrooms, mini heirloom tomatoes, kale, yellow bell peppers and or your favorite veggies.
Bake in the oven for 25 minutes or until crust is slightly golden at 400 degrees. Once pizza is done baking drizzle your basil cheese sauce over your pizza, top with fresh basil and ENJOY!

FARMERS MARKET GUIDE


Why purchase produce at the farmers market?

Organic and local produce is THE best produce to put into our bodies! Fruits and vegetables found in grocery stores are highly processed and grown using pesticides, hormones, antibiotics, genetic modification and covered in wax. The pesticides on produce can have a negative impact on the human body. Fortunately the farmers market has several organic and local produce, the freshest, most tasty fruits and veggies you will ever taste! 
                           Key tips and tricks
  • Bring a basket or reusable bags.
  • Walk throughout the entire farmers market once WITHOUT buying anything, this way you can see and compare prices of produce and speak with the vendors about their produce.
  • Buy your hard fruits and vegetables like carrots, potatoes, eggplant or watermelon at the beginning of your trip, then work your way to buy the soft and fragile fruits like grapes, tomatoes, and strawberries, this way they don’t get smashed, or effected by the heat.
  • My favorite most helpful tip, go to the farmers market the at last hour before they close. Begin to shop 30 minutes before the market closes this way you score all the good deals. The vendors will put their produce at half price and offer other awesome deals and will sometimes negotiate a price because they most likely do not want to take all their un sold produce back home.
  • Lastly have fun, buy some fresh flowers, and enjoy your fresh organic produce!
  • Know where you food comes from, and support the local farmers in your area, it is the best way to feel connected to your community.
